Make the following marinade, cover and refrigerate the chunks of fish for 20 minutes up to 24 hrs.

3T. lime juice

1 T. ground cumin

1 T. paprika

2 tsp. minced garlic

1 tsp. salt

1 tsp. black pepper

1 /2 lb. tilapia or other white fish, cut into chunks

 

Heat 2 T. olive oil over medium hight heat; quickly fry 2 chopped onions 1-2 minutes.

Reduce heat to medium. Add 4 lg. peppers, fish, 16 oz. can of diced tomatoes.

Pour 1 can cocnut milk over mixture; Cover pot and simmer 15 minutes, stirring occasionally.

Optional: stir in 1 bunch fresh cilantro.
